About Kimchi / 김치

Kimchi is Korea’s most representative dish.  It is made with white Chinese cabbage, white radish, and cucumbers that are salted and preserved in a spicy seasoning of red chili pepper powder, garlic, ginger, green onions, and pickled fish sauce.  An indispensable part of any Korean meal, kimchi not only preserves vegetables but is also a vital part of a healthy Korean diet, thanks to the enzymes and beneficial bacteria created in the fermentation process.  It is an excellent source of vitamins and minerals, keeps the digestive system healthy, and stimulates the appetite.
